During his college years, he became the favorite invitee for weekends away and parties for his friends, because he was always ready to take on the cooking responsibilities for the event.
With their encouragement, Maurizio attended the Cooking and Hospitality Institute of Chicago, where he graduated with honors in 1999. He also attended a study abroad program in Chioggia, Italy, gaining valuable insights into Italian cuisine while studying at a five star resort with top Italian Chefs.

In 2005, Chef Maurizio started offering an escorted tour of the Amalfi Coast of Italy. An UNESCO World Heritage site, the Amalfi Coast of Italy was chosen for its exceptional cultural, historic, and geographical example of Mediterranean life.
